considered playing around with some land grabs and wanted some sort of retal assurance, admittedly not the most efficient growth strategy, but since this is my first set in many years and I've never played a farmer and haven't seen any strats beyond some startup ideas, I'm not really sure what to do for endgame here

Well, as an aside:

You do not need SDI or Spy tech at all. That's a waste of cash. Warfare too if you're netting. Strat is only useful if you're grabbing, and as a Demo, you likely don't need any Weps tech.

Cut those out/back, you'll have a pile more stockpile. In fact, you should cut out all that tech and put it into bus/res.
