This next weekend if it's nice out, which it most likely will be.
Ingredients
4 Cornish Game Hens
4 garlic cloves
4 Tbn of Kosher Salt
2 Tbn of Louisiana Hot Sauce
2 Tbn of Sugar
1 tsp Cayenne Pepper
1 tsp granulated garlic
1 stick of butter
Directions
Brine the Cornish Game Hens in cold water with 3 Tbn Kosher salt, 2 Tbn Sugar and 2 Tbn Louisiana Hot Sauce overnight
Prepare your smoker grill and have enough Hickory on hand to smoke for 3 to 5 hours.
Drain The Cornish Game Hens, then spatchfluff them.
Rub the Cornish Game Hens with Cayenne Pepper, granulated garlic and the remaining Tbn of salt.
Rub the inside of the Cornish Game Hens with two of the garlic cloves you've cut for just this occasion
Place Cornish Game Hens, skin side up on the smoker grill at about 225 degrees f.
Allow to smoke for 3 to 5 hours depending on how smoky you want them to taste.
Preheat a direct grill at this time.
Once you've removed the Cornish Game Hens from the smoker, immediately place on the direct grill skin side down with an aluminum covered brick holding them flat for a few minutes to add crispiness to the skin side.
Serve immediately with a side of potato salad and cole slaw.
